Loved this essay- the intertwining of faith, tradition and place enabling food that satisfies while being sustainable and not gluttonous or destructive- the lessons here are deep. Thank you!

Really enjoyed reading this. The thing I will always order if I see them on the menu in Liguria, are the pansotti. I love the particular taste of the herby filling! I guess they’re also linked to the magro tradition…?

They are indeed a Magro filled pasta! Usually seasoned with walnut sauce, a hearty sauce without meat!

Have stayed in Camogli 5 times over the years, starting in 1995. The last time just last year, unfortunately its beauty has attracted the 2 hour boat visitors. My friends in Camogli lament the come and go day tourists but the tide has turned and they *re here to stay.

When I was young I would stay the month of September, starting with the Sagra del Fuoco in Recco. Stayed with friends in Camogli, last year I reunited with friends I had not seen in over 20 years it was as if I never left. Although I live just north of San Francisco my heart belongs to Camogli.
